In the small Jura town of Poligny, the entire Comté cheese industry opens its doors for a long weekend every April. Farms, dairies and aging cellars across the Jura, Doubs and Ain regions invite visitors to follow the journey of France's best selling AOP cheese from pasture to cellar.
