Every year on 1 May, the city of Teramo in the Abruzzo region of central Italy transforms into one vast open-air kitchen. The Sagra delle Virtù is one of Italy's oldest culinary festivals, celebrating a dish that has survived for centuries: the Virtù teramane, a rich soup made from legumes, seasonal vegetables, pasta and herbs prepared according to a strict official recipe code. In Teramo, 1 May is not an ordinary public holiday; it is a community ritual uniting families, restaurants and the entire city.

History and Meaning

The Virtù teramane originate from the poor peasant kitchens of 19th-century Abruzzo. At the end of winter, the last stores from the pantry, including dried legumes, pasta scraps and cured pork, were combined with the first fresh spring ingredients such as broad beans, peas, spinach, chicory and wild herbs. The result was an elaborate minestrone-style soup whose preparation takes several days, since every ingredient is cooked separately before being brought together in a large cauldron at the end. The name Virtù refers to the virtues of the peasant: hard work, patience, frugality and generosity. Traditionally, large quantities of the soup were prepared and shared with neighbours and those in need.

The Dish: Virtù Teramane

The Disciplinare drawn up by the Comitato Le Virtù Teramane, a body of anthropologists, food historians and leading restaurateurs, sets out the ingredients and preparation method in binding detail. The soup must include:

  • Fresh legumes: broad beans and peas
  • Dried legumes: beans and lentils
  • Fresh seasonal vegetables: Swiss chard, chicory, endive, borage, spinach
  • Pasta: mixed durum wheat pasta, hand-made egg pasta
  • Meat: minced beef, pork trimmings
  • Aromatic herbs from home gardens and wild foraging

Tortellini, agnolotti and Parmesan explicitly do not belong to the original recipe. Every family has its own variation, and no two bowls of Virtù taste quite the same. That is exactly what makes the tasting at this festival so special.

Entry and Prices

The Sagra delle Virtù is a free public city festival with no admission charge. Visiting the historic centre and walking through the streets costs nothing. Those who eat at one of the participating restaurants pay the standard menu price for the dish.
